Recipe: Whole Wheat Vanilla Pudding Cupcakes

Hi! My name is Pamela from Pamela's Heavenly Treats, where I make healthy cupcakes and cookies mainly, I will dabble in other desserts if need be.  I make all my treats with 100% whole wheat flour and I have a few special ingredients that I add also, to give my healthy treats that moist, delicious taste.  Today I am going to make an oldy but goody, Whole Wheat Vanilla Pudding Cupcakes with Vanilla Cream Cheese Frosting, it doesn't get no better than that.  This is a very simple recipe, if you follow it; you will have a heavenly healthy treat.

Whole Wheat Vanilla Pudding Cupcakes

2 1/2 cups of whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup light brown sugar
1 tsp vanilla
1 cup fresh buttermilk
(2 tsp white vinegar and 1 cup of fat free milk)
2 fresh eggs
1 tsp white vinegar
1 cup canola oil or applesauce
(I prefer canola oil)
1 vanilla bean or 2 small cups vanilla pudding

Set oven to 350

Mix wet ingredients, and then add sifted dry ingredients until well blended. Fill cupcake tins 1/2 way, and bake for 18 minutes, once done cool on wire rack.

Vanilla Cream Cheese Homemade Frosting

1 stick unsalted butter (softened)
1 8oz package of fat free cream cheese (softened)
3 cups of sifted powdered sugar
2 tsp vanilla
Cream butter and cream cheese together, add sifted powdered sugar one cup at a time. Place frosting in piping bag and frost your cupcakes.
